The opening between my cabinets is 36 inches wide, but the microwave is only about 30 inches. My old microwave is also 30 inches wide, but there are steel plates on both sides to cover the difference between the 36-in opening and the 30-in microwave width. Do those plates come with this purchase? If not, do the installers have them and install them if I get the option for installation?

I didn't think it did because the one that was on display at the store didn't have it. They must have not installed it on the one displayed in the store. But the one that was delivered and installed came with two grease filters. Hope this answers your question.
