Most likely it’s from the refrigerator being over stuffed and the air cannot circulate throughout the inside. The refrigerator is a dehumidifier, but air needs to be able to flow around items. Also, if you stand there with the door open for too long, you introduce a lot of warm air into the fridge and can cause excessive amount of moisture. The extra room temperature air will make the lettuce wilt faster than normal and condensation to build up.
