Most electric humidors will do this. They default to coldest temperature. In South Florida, we lose power from 1 second to 10 minutes almost every time it rains. To remedy this, simply buy a cheap battery backup ups. When you lose power, the battery kicks in and temperature remains same. When power is restored, the humidor will go back to operating on your ac power. I think my battery ups is rated for 450va and it keeps the humy running on battery power for a good 30 minutes until power comes back on. It works like a charm. Good luck.

The Ambient WS-8482 does a fine job of monitoring the TEMP and HUMIDITY , sending the results to your phone of accessible from any computer. The WS-8482 also sends TEXT (or email) alerts to my phone for any Over /. Under Temperature or humidity condition you set it for. So, if my cooler drops to , say 63, I know that i must have had a power failure. If someone is home to reset the temp, GREAT, if we're both traveling ..... I have real cool (and not too dry) sticks till I get home.
