Yes, you can use it without the app. At first it will ask you to set it up with the app but just to make an account.

Yes! I never use the app! I have mine connected via Wi-Fi. After I take a reading I can assign it to a user and save it to their profile and it will display the temperature on the device at that time. You can go into the app and look at the history if you like! You will also need the app to setup the device.

Yes you can use it without the app. I have not downloaded the app, only my fiancée has but I use this often and without the app.
