If I make any noise itll suddenly jump up in volune, then it hears itself being noisy and becomes even louder. Not a fan. I set the volume for a reason. If I wanted to be in a screaming match with my alexa I would raise the volume myself.

I am sorry to hear you were having trouble with the volume on your Echo Show 5. To turn off the dynamic volume (often referred to as Adaptive Volume) on your Echo Show 5, you'll need to use the Alexa app.
Here's how:
-Open the Alexa app.
-Tap "More" at the bottom of the screen.
-Tap "Settings."
-Under "Alexa Preferences," tap "Voice Responses."
-Toggle the "Adaptive Volume" option off. You'll see a toggle switch to the left of the option when it's off.
