Also, Samsung has had invasive data policies. Lastly, the battery power has requires daily charging if heavy use.

You should also make sure the Galaxy wearable app is up to date, but it may be necessary to reset the app and unpair your watch. Check out the article titled, "Samsung smart watch will not connect to a phone" for some simple troubleshooting steps to help you resolve what you have described to be experiencing with your Galaxy Watch6's Bluetooth connectivity.
