“I have a 7th gen. 10inch fire tablet, with a show mode. Will any case slide over the show mode sleeve or is there a certain case I need to look for? I want to use this tablet in the car and at work. Do I have to remove the sleeve to get into the case?”

No.. not necessary. And I purchased a case when I bought and it will stand upwards and also sideways. Comes in handy while watching a movie or netflix...
