“Is there an option to turn off Siri so it isn't "always on?" Or would I just power on and off? I love Apple ecosystem but still a little creeped out by something listening to me all the time.”

Yes, you can tell Siri to stop listening to you. No joke just say "Hey Siri please stop listening" The HomePod will confirm and then you will have to hold the top of the HomePod to turn the microphones back on.

Yes, you can completly shut off the Siri portion, and make it "just a speaker"

The hey Siri feature only goes through apples servers and is much safer then google or amazon. You won’t get the creepy adds for things you just were talking about!

You can disable the listening of Siri. So, in a sense yes, you can turn off Siri.
