You can only use the Apple / Siri voice assistant on the HomePod... 
As long as you have an Apple Music subscription, you can ask for any song to play that Apple has in its system. 

As well as any album or some music mixes. Like "Siri, Play Deep House Music" "Light Jazz" "Music I can study to" 
As well as ask it to play the latest podcasts of your choosing.

Yes. You can ask for any song. Or you can ask for an album or playlist or just an artist or type of music. This works for content from Apple Music subscription, music purchased through iTunes, or uploaded via Apple Match.

Yes... and no. You can request any song in your iTunes library, or if you are an Apple Music subscriber, you can request a song from their catalog. It’s great, sounds AMAZING but limited to the Apple ecosystem.
