• If by itouch you mean iPod Touch then yes it Gould as long as you download the Apple Watch app on the iPod touch

• Apple Watch can only be set up and used with an iPhone 5 or newer model of iPhone, running the latest version of iOS. It cannot be paired and used with an iPod touch.
