“What is the advantage to having a 32GB or 64GB card with this device? Companies such as Jameco and AdaFruit sell 16GB preprogrammed cards with NOOBS. Why might one need the additional space?”

Just so you know, you cannot write to the SD Card like you do a regular hard drive. Over time it will fail so it is best to use the SD Card just for the OS and then use an external drive for data like backups as was mentioned in the original answer

How much SD space you need depends entirely on what you want to do with the Pi. I've settled on 32GB because for some of the stuff I do I need more space, but some of my older Pis that are doing things like backup server and furnace monitor are running just fine on 8GB
