According to the Owner's Manual: it works similar to a regular slow cooker. There is a button on the front to select for slow cook. Low is for 8+ hours, high is for 4-6 hours. Put your food and liquid in, set the lid to locked position and set the steam release dial to "release" because even though this setting does not cook with pressure some pressure could build up inside during cooking. Select "slow cook" and the time and temperature as needed. Four hours on high is the default setting. Press "Start/Stop" and time will begin to countdown. When time is up it will automatically switch to "Keep Warm" and the timer will start to count up to 4 hours. After that it will shut off. You can open it during slow cook since it is not cooking under pressure, but like with all slow cookers that is not recommended because it does not recover the lost heat when the lid is off very quickly. Use a kitchen glove or mitt when the lid it removed since there may be some built up steam. All of this is from the Owner's Manual. I have not tried it for slow cooking yet but intend to in the near future to make Moroccan Chicken that I have always made in my regular slow cooker.
