“I am looking at purchasing this product but wondering if it is like my other upright in that as soon as I try and use the hose attachment the vacuum falls over.. Is that the case with the Dyson (I have never had one before).”

Our vacuum does not fall over. It is stable.

Upon your first few uses with this upright, the hose may seem stiff, but the more it's used and stretched, the more pliable it will be and the less likely you'll have any issues with the vacuum tipping over.
