They last for quite a while, since the individual color cartridges are wrapped and sealed in air-tight plastic packages.

Actually, most inks have a date on them. But in the event that you cant locate one, the ink is usually good for 3-5 years, if kept in the foil wrap.

THey last quite a while if left in the package. Sometimes if I open them I'll put a drop of water in a ziploc bag to keep it from drying out. I've only had issues with printers with the print heads if I don't use the printer for a while. Then it eats the ink when charging. 252 cartridges

Yes they will dry up eventually but okay at least to a year. Keep in cool place(not cold or hot). My printer and extra ink were in storage, Ink was pretty tacky not usable in 2 years unopened.

Just installed a set purchased for after starter set emptied, with a brand new Epson WF 7720 Wide format printer in June 
Not even 3 months old and kept unopened in original factory packaging. BLACK DRIED UP

I can only tell you my experience. I prepare tax returns. I had a pack 
leftover from last year. I opened it about two weeks ago, it’s doing fine
