“My window opening is 21 inch wide which is 7/8 inch less than the required min. opening width. Can I install this unit by using only one side of side curtain? This unit width is 16-7/8", why need min. opening 21-7/8 inch?”

Yes you can. The folded side curtain takes up some room. You’ll need foam to seal opening on side with no curtain.
