The box directions state that you only need one router device for only 1000 sq feet. Could probably save a few bucks by buying one or two. We have a two story home and needed two routers to get WiFi upstairs. The price difference between two and three routers was negligible, so we got the three package.

I think you would be fine with just one Google WiFi router. I use two in 1950 sq ft and have plenty of signal and great speed everywhere.
