“Has anyone used this model with adobe photoshop? Only have 8gb makes me nervous but I have heard that the processor is so fast that it shouldn't matter too much.”

It will be fast with low res, small size images. But if you want to seriously edit more professionally this is not for you. If budget is tight I would invest in a Mac Mini with M2 and at least 32GB of ram. And invest in a 27 monitor. I tested this model in a friend's studio who was very happy just to find out this can only do office or small social media stuff tasks.
