“There appears no way to pair this device to output sound to a bluetooth speaker. When you get to the menu to choose a default speaker for music and audio, there is no "Pair Bluetooth speaker" option. Chime in if there is work around.”

No, this device is the bluetooth speaker. You can pair a bluetooth audio source to it, but not pair it to an external bluetooth speaker. What you can do is use the Google Home app to change which speaker in your home that it outputs from. So if you've got a Google Chromecast Audio you can plug it into another speaker system and set it up to output to that instead of it's built in speaker.
