“Would it be ok to just use these two speakers through an amp for my record player and for TV/ Gaming. I get it's just two pieces to an entire surround system, but for starters, would this be ok?”

This pair of bookshelf speakers is better than most smaller speakers. There is a matching center speaker you may want to get later, they're even better with a subwoofer. These speakers and a sub would be a great 2.1 system. I have two pairs of similar speakers I bought long ago, which I'm using for side and rear surrounds, but these far outshine them.
