This increases the versatility of this model & is one of the reasons that I splurged on it. You can bake, roast, or heat your choice of dishes with or without convection. The fan runs with either option. Cooking with convection requires some adjustment to recipes for time & temperatures. The directions are very helpful.

Red pasta sauce, water, and other sauces have spilled on the grates and I have cleaned them easily. The directions recommend not leaving stains overnight.
