I spoke to a Maytag rep because I was concerned about this as well. The user manual does not give enough information to help you with this. she sent me the "Top Load Washer Cycle Guide" that pertains to this and other top load Maytag machines. Extra water is added from time to time to adjust the temperature of the water, to keep it warm if the water cools for example. Deep fill is available on the bulky sheet cycle. I'm not sure it can be used for others but I'm experimenting to find out. I used the white cycle yesterday and it did not "deep fill." Deep water is not available on the normal cycle mode either. I hope this helps. I went to Maytag facebook page and messaged them with my concerns. They got back to me almost immediately.
