For the sake of simplicity, you might want to look at some Chromebook options. The Surface Go will definitely meet her needs, but be aware that it has just a single USB-C port. You can certainly use a Bluetooth mouse, but for USB devices, storage expansion, or external monitors, you will probably want a USB-C hub that will increase the number and variety of ports.
