It has nothing to do with the voltage but rather the fire rating of the cable. In-wall cables don't release toxic fumes when they burn. Anything run in-wall (speaker cables, HDMI, CAT-5&6) should should be rated CL2 or CL3.

I don’t see why you couldn’t run low voltage cable in drywall. As long as it is supported accordingly and down the center of the stud frames.

Don’t waste money on this, it’s extra to have white. Buy 16 or 18 gauge wire and you will be good.
