Hi Chris, No, there is no option to turn off the fans or turn the appliance into a regular baking oven. However, it does have a regular baking mode and a steam bake mode if needed. Please see page 34 under the "Basic baking and broiling instructions" and page 35 under the "Steam Bake, Steam Roast" sections of the manual.
