“It says 120 refresh rate but back of TV shows 60hz. Is there a way to enjoy 120hz? I have my xbox one x that can play at 120hz at 4k resolutions hdr10 so I'm not sure why this TV is advertising 120 and I'm not able to access these rates”

Yes you can at 1440 or 1080 resolution
