“My gas line is not flush mounted, so I don’t expect to be able to butt this range directly against my wall. How do I address the gap between the wall and the range ? Does this come with some sort of cover to cover the gap?”

Are you sure that your existing stove is a slide-in? Generally, slide-in stoves all allow some space for the gas fitting to stick out from the wall. I confess that I didn't watch that part of our install, so I can't detail the amount of space in this unit.
