“Are the knobs easy to remove and put back on every time you use the cooktop? I'm trying to find a way to baby-proof these knobs, concerned about fire safety with little hands, and traditional baby-proof covers won't fit”

You have to give them a pretty good pull to get them off. But Its not hard to get them off . Definitely not going to come off by brushing against or getting caught on clothing.
