My wife and I are looking at the S8, neither one of us are on a monthly payment plan on our phones. Her contract is up but mine is not, but since we'd have to switch to the monthly payment plan can I just trade my S6 in and both of us get the S8? null

I just recently did just that. You have to pay off your phone, but Best Buy actually gives you back $122.00 gift card...

You should be able to upgrade, the only thing would be your upgrade elegibility.

Another issue could be if your on the phone payment option, you would have to meet your payment agreement before Vzw would let you upgrade.
Last option would be to talk with Best Buy Wireless, or a Verizon direct store.
