“Has anyone tried using an adapter to connect an ethernet cable to the micro-usb port? From what I understand the Plugable adapter works for the 10" version of this tablet, but not the 7". No info on this 8".”

Yes, the Plugable adapter works for this 8" tablet (running Marshmallow), but it's worth noting that Samsung does not offer an adapter or recommend any 3rd party adapters.
