“Can I set any of them to continuously display time? I need to be able to glance at it while teaching without being obvious look at time. Need something other than wrist activation.”

Yes you can it easily accessed thought a pull down menu much like Samsung phones.

Yes. You can set it to have the display always on, either normal or battery saving mode (black and white). Usually you can go up to 2 or 3 days with a battery charge, with the display always on you should need to charge it every night.
