“How do I configure this to get the advertised speeds? I'm only getting about 700 down and 100 up. I have test my connection has been tested to support over 2.5Gbs, and my device wifi antenna has as well. Considering returning if I can't get this fixed.”

Hello Samuel, The advertised speeds via Wireless i.e. AX3000 are the combined network transmit rates of both bands. It is not the wireless internet speeds you will see. That is different and not something we can guarantee or advertise. The ethernet speeds of up to 2.5Gbps are based on the Ethernet port on your modem, the router, and the ethernet cable used between the two devices. LAN side depends on the LAN port on the router the ethernet port on your client and the ethernet cable. The LAN ports are only capable of up to 1 Gbps. So it is possible you are getting the most you are able to get based on the factors above. We do still recommend contacting support for more assistance.
