Based on the power specifications offered by Insignia, the 3.0 Mini fridge is rated for 180 Watts for normal operation. What's not offered is the start up or surge current. However, your Cobra Pro 2500 Watt inverter is designed to handle much larger motor loads with known startup surge currents so the 3.0 Mini fridge shouldn't be any problem.
