How do I update the software on the WF 7840 null

Don't update the software. The only thing you'll achieve is the inability to use 3rd party ink. This will brick your epson.

You can do it either from the display or through the apps on your PC. It must be connected to the internet.

Hi Steve, If you are using Windows, open the WF-7840's printer driver, select the Maintenance Tab and click the Software Update button. If you are using Mac OS X , open Applications > Epson Software folder and select EPSON Software Updater. Regards, Mark - The Epson Team.
