How can you bring up the camera manually while driving? Whenever I go into camera settings it says I do not have permission to do this while driving. Even in park. Camera only comes up in reverse

I would suggest you speak to the installer at Best Buy. The installer I had was very knowledgeable. He guided me to all the correct accessories that I needed.
