“Used a KAC M1824BT on a motorcycle I had several years. Installed in another motorcycle and I can't seem to pair it to my iphone 11. It sees the device, but won't pair. I saw somewhere that it's only compatible now up to an iphone 6. Is that correct?”

Maby the previous phone has to be deleted from the amplifier like a pair of wireless headphones. I would call Kenwood tech support or get a new compatible amp
