“How do I adjust the sensitivity? Under Motion Settings, I have motion frequency on "light" but birds and even bird shadows as they fly by set it off every few minutes.”

Make sure you have the motion detector, the white part on the bottom of the camera, level. This will insure that the detector is only looking straight out and down. I had the same problem with my driveway camera and this solved it. See the instructions.
