The length of time the recordings are kept depends on what recording options you select for each camera. I have 9 cameras inside set to trigger on motion and heat and one outside to trigger on just motion. The outside camera records almost constantly at night due to the dust particles it "sees" with the IR sensor. This happens with most cameras. You can decrease the sensitivity but then you risk not triggering on real motion. With this setup I am getting about 30 days before the recording are overwritten on the disk. If you don't have any outside cameras then you will probably get more than 30 days again depending on how much activity goes on inside. I haven't experimented with disabling recording on the outside camera to see if I can get more than 30 days. I believe you can use a USB memory stick to manually transfer the recordings but I haven't tried that yet.
