A: Yes. I use my gx85 on this all the time. This tripod will work with any dslr camera with a 1/4 thread in the bottom(I think all dslr cameras have this thread mount)
A: In the instructions that I received, it doesn't specify not mounting the plate to the camera. I've been using the peak design plates for the capture clip and for other tripods for years now. Like any metal tripod plate, there is risk of scratching up the bottom of your camera. Nothing to be overly concerned about though. If you have larger lenses with the option to mount via the lens rather than the camera body, this is a safer solution to prevent damage to your lens mount, as well as prevent the tripod from tipping due to weight imbalance.
