I assume if it has Bluetooth capabilities it would pair. I paired it to a Bose mini sound link.

From looking online it appears that the XBOX Series S does not have Bluetooth built in, so you would have to connect the XBOX to a device that allowed sound output through Bluetooth in order to pair it with the Echo Dot 5th Gen. If the TV or monitor you are connecting the XBOX to supports audio out via a 3.5mm cable (or some combination of connectors that would end in one) you could use an Echo 4th Gen as a speaker via it's 3.55mm Aux port. Alternatively, if your TV/Monitor supports optical out the Echo Studio might be a good fit as it features an optical Aux port. Hope that helps, have a great rest of your day!
