Have you tried different types of coffee? Like a different brand or flavor? This one time I was so sure I was tasting plastic, and thought it was the coffeemaker, until my son said “this kind of coffee leaves you an after taste like plastic”, so right then I tried with a different flavor, and indeed, it was only that specific flavor. Maybe is the same thing
