“We have electric rolling shutters on our condo, and need a power source to raise/lower them during a power failure. Shutter specs are listed as 115 VAC, 60Hz rolling shutters. Would this work? How many times could we open and close them over 3-4 days?”

You will need to find out how power or wattage your system uses. The 1500 va cyberpower supplies 900 watts 120 volts out.

You most likely would not get several days of usage from a UPS. If you are looking for several days of power I would recommend a generator. Thank you for your question.
