“What’s the difference in “Wi-Fi” model and the “Unlocked+Wi-Fi” model? I know what “unlocked” means. So, is the “Wi-Fi” model not able to be connected to a data plan at a later date?”

Only "WiFi" models won't allow you to use Sim (data plans) as they does not come with sim slot.
