“If I just send emails, look things up, print photos etc, just basic use, would 256GB or less work for me?”

The short answer is "yes"! Now, if you plan to keep every photo you've ever taken and leave it on the device then no. But it would take you some time to fill up that much memory. I think the 256gb size is the best overall size to get.
