Need have iOS 26 or later and then setup properly on the settings and if you have the feature available should be able to see Translate option to select the language. Then based on how you have it setup (I press and hold both airpods and it activates and says starting translation). Additionally I think that iPhone 15 or greater might be the only ones it is available on. Not 100% sure of model but there is a dependency on the version.
