Theirs a feature called “ conversation awareness” when your using your AirPods anc or not, with someone talks to you, if your watching a video or listening to music the volume gets lowered and it’s kinda like transparency mode is on and you can clearly hear the individual speaking to you, it also continues to work if you are speaking to them. (Make sure you have this feature enabled)

Yes! It perfectly blocks out all backround noise while being able to hear voices pretty well. If a movie is in on the background of the room your in, you can hear the dialogue pretty clearly which can be slightly irritating but it blocks out everything else.

It doesn't completely blank out sound, think of it more as a reduction when ANC is turned on.  There is also an ambient mode which blends your content and the outside world
