• No they do not record audio or video. Any Apple Device pairs natively all other devices pair as standard Bluetooth devices do.

• With iOS 12 there’s an option where the AirPods can be set say on a counter and you are able to listen on your phone, like a spy. I have not tried but I’m sure you can record an audio file or that type of thing using the AirPods. There’s no accessories unless you want to use a third party on eBay etc. Good luck.
