“If your load is too wet after the Spin cycle, it says to select the Rinse and Spin cycle and deselect Extra Rinse as an option. This will allow the washer to perform only the Spin cycle on the load. Does this work and can you use this often?”

Yes it works and you can always intensify your spin cycle before you start your load. Not sure what you mean as often.
