I can not see very well and DO NOT LIKE the little displays that you have to use on these copiers. Is there anyway to turn it off and just use the copier without the little display? And if so, how would I do this? null

There is an app available where you can print from your phone or on your computer. All of the setting should be there

Hello jaxxxx. Unfortunately, the ET-2800 control panel screen cannot be disabled as copy functionality is only available through the panel. However, you can change the power settings to have the display screen turned off when not in use. Regards, Kevin - The Epson Team.
