I had a Windows 10 Update it messed up many things including my printer. So, the last time my printer was toast after the update I felt it was in my best interest to stop the updates. I would definitely use the cartridges that are called for use with your product. But it seems certain devices do not do well after the Windows 10 updates. If my info is correct HP is trying to help fix these problems. My Sister had her HP printer say the same thing yours did and she had just bought it. Hope this helps and not too much info.

Regarding your OfficeJet Pro 8610, it should be compatible with Windows 11. Try downloading the drivers, or uninstall it and re-install. You can get the full-feature software at 123.hp.com.
