“I'm looking for a projector that can connect to soundbars with bluetooth and that has the ability to adjust the zoom / screen size. This will be mounted at the rear wall of my living room, but I want to be able to adjust the image size. Would this work?”

This projector does have a Focus Ring which allows you to focus the image. Use the Focus Test function to slowly adjust the focus ring to the left or right while viewing the mark on the screen. Optimal focus is reached when the left and right sides of the screen appear balanced. Make sure the product does not move when adjusting the focus. This time of setup could work. Yes, Hit on picture button and adjust their your screen sizes like original, 16:9, 4:3. I hope this helps.
